Empez\u00f3 a fabricar queso en 2004, en una queser\u00eda propiedad de su madre, y m\u00e1s tarde abri\u00f3 la suya propia. Su queso obtuvo el reconocimiento del Libro Guinness de los R\u00e9cords por alcanzar el precio m\u00e1s alto en subasta.<\/div><\/div><div class=\"lets-info-up-block lets-info-up-meta-block\"><div class=\"lets-info-up-meta-title lets-info-up-pretitle font-h\">CONTEXTO<\/div><div class=\"lets-info-up-meta-content lets-info-up-title font-b\">El cabrales es un queso azul intenso elaborado artesanalmente por ganaderos rurales de Asturias, Espa\u00f1a. Se elabora con leche de vaca pura, sin pasteurizar, o mezclado de forma m\u00e1s tradicional con leche de cabra u oveja, lo que crea un sabor m\u00e1s fuerte y picante. Toda la leche utilizada en la elaboraci\u00f3n del Cabrales debe proceder exclusivamente de reba\u00f1os criados en la peque\u00f1a zona de producci\u00f3n de Asturias, en las monta\u00f1as de los Picos de Europa.<\/div><\/div>\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t<\/div>\r\n\t\t\n\n\n<p>ASTURIAS, Espa\u00f1a &#8211; En nuestro peque\u00f1o rinc\u00f3n de Espa\u00f1a, mi hijo y yo saltamos a la notoriedad mundial cuando nuestro queso azul asturiano se subast\u00f3 por el precio m\u00e1s alto del mundo. En nuestra Queser\u00eda Los Puertos nos enorgullecemos de transmitir los secretos del oficio, transmitidos de generaci\u00f3n en generaci\u00f3n.<\/p>\n\n\n\n<p>Elaborado artesanalmente por los agricultores, el queso tarda entre dos y cuatro meses en madurar dentro de cuevas naturales en las monta\u00f1as circundantes. Mientras crec\u00eda, frecuent\u00e1bamos las monta\u00f1as de Espa\u00f1a y mi madre me ense\u00f1\u00f3 los secretos de la elaboraci\u00f3n del queso.<\/p>\n\n\n\n<p><a href=\"https:\/\/orato.world\/?s=spain\"><strong><em>Ver m\u00e1s reportajes de Espa\u00f1a en Orato World Media <\/em><\/strong><\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-vendimos-nuestro-queso-por-30-000-euros-en-subasta\"><strong>Vendimos nuestro queso por 30.000 euros en subasta <\/strong><\/h2>\n\n\n\n<p>Al crecer, me parec\u00eda incre\u00edble aprender algo tan personal de nuestra cultura; me sent\u00eda como si estuviera dentro de un secreto. Mientras mis manos trabajaban el queso, miraba fijamente a mi madre, copiando todos sus movimientos. Quer\u00eda que el resultado fuera perfecto. El proceso se convirti\u00f3 en una experiencia que nos uni\u00f3 y cultiv\u00f3 mi amor por la comida. De adulta, abr\u00ed mi propia queser\u00eda, deseosa de compartir nuestra receta con el mundo. <\/p>\n\n\n\n<p>El queso azul asturiano que subastamos -llamado calabrese- debe madurar en un 90 por ciento de humedad con una temperatura de entre seis y 12 grados. Esto permite que se produzca la magia que confiere al queso sus vetas azul verdosas, su cremosidad y su rica textura. El aroma se vuelve bastante intenso, sobre todo cuando se a\u00f1ade leche de cabra a la receta.<\/p>\n\n\n\n<p>Es muy divertido ver la reacci\u00f3n de la gente cuando lo prueba. Suponen que odiar\u00e1n el queso por el olor, pero cuando le dan un mordisco, sus ojos se abren de par en par como si hubieran descubierto algo realmente \u00fanico e incre\u00edble. <\/p>\n\n\n\n<p>Abr\u00ed la Queser\u00eda Los Puertos hace 20 a\u00f1os y desde entonces he registrado un r\u00e9cord Guinness por el queso m\u00e1s caro jam\u00e1s adquirido en una subasta. El restaurante Llagar de Colloto lo compr\u00f3 por 30.000 euros. Me sent\u00ed totalmente incr\u00e9dula cuando me enter\u00e9. El premio nos puso en el punto de mira y, al d\u00eda siguiente de su anuncio, m\u00e1s de 40 personas hicieron cola en la f\u00e1brica para comprar nuestros productos. La emoci\u00f3n me invadi\u00f3 mientras sal\u00eda del coche, apenas capaz de contener mi alegr\u00eda. Parec\u00eda que a\u00f1os de trabajo hab\u00edan dado sus frutos. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-transmitir-la-tradicion-quesera-a-las-generaciones-futuras\"><strong>Transmitir la tradici\u00f3n quesera a las generaciones futuras<\/strong><\/h2>\n\n\n\n<p>El bloque de queso adquirido en la subasta tuvo un periodo de maduraci\u00f3n de casi 10 meses, durante los cuales permaneci\u00f3 en una cueva a 1.500 metros de altitud. Cuando entraste en la cueva, un fr\u00edo glacial envolvi\u00f3 tus miembros. Dentro de aquellas paredes, donde las temperaturas descend\u00edan hasta los seis o siete grados, parec\u00eda que hac\u00eda mucho fr\u00edo. Esto provoc\u00f3 un proceso de maduraci\u00f3n m\u00e1s largo. En lugar de secarse y endurecerse como la mayor\u00eda de los quesos, se vuelve cada vez m\u00e1s maduro y blando. Cada mes, sub\u00eda a la cueva para limpiar el queso y garantizar un sabor cremoso y pleno. Finalmente, el 27 de agosto de 2023, la ciudad acogi\u00f3 un certamen denominado <a href=\"https:\/\/www.turismoasturias.es\/en\/organiza-tu-viaje\/fiestas-interes\">Fiesta de Inter\u00e9s Tur\u00edstico del Principado de Asturias.<\/a> El evento pretende mostrar los diferentes productos de la comunidad a personas de todo el mundo. Tambi\u00e9n cuenta con juegos tradicionales, exposiciones, mercados, m\u00fasica y una muestra de los quesos locales. Aprend\u00ed de mi madre, que tambi\u00e9n ten\u00eda su propia queser\u00eda. Al final del concurso, me coronaron ganador y aplaudieron mi trabajo. Empec\u00e9 a llorar al aflorar las emociones profundas. Recordar a mis antepasados y c\u00f3mo iniciaron esta tradici\u00f3n me puso la piel de gallina. Hoy, mi hijo trabaja conmigo y alg\u00fan d\u00eda heredar\u00e1 la receta.
